Easy Black Bean Salsa Recipe

My mom's recipe for homemade black bean salsa is by far my favorite!  And pretty much anyone who's had it, raves about it and can't get enough! It's simple, fresh, and colorful.



Here's the recipe:
1 can whole corn, drained
1 can black beans, drained and well rinsed
1 red pepper, finely chopped
1 orange pepper or yellow pepper (using orange adds extra color) finely chopped
1 medium to large onion, finely chopped
1/2 bunch cilantro, finely chopped

Mix everything. Add vinegar and oil to taste ( I add more vinegar than oil)
Serve with Scoops chips!

Seriously, this is the BEST black bean salsa you'll ever make (or taste)!  
Perfect for summer gatherings...ENJOY!

  2. This was unbelievably yummy. The only change I made was to add a diced avocado. I can't stop going back for one more "taste". It's a great way to eat your veggies. Thanks for the recipe - it's a keeper.
